You can fit more profiteroles in a bucket. With more cream and more chocolate sauce. And I do love bitesize things you can choose to keep having more of.

Although there's a delight in picking up an eclair and just smooshing it in your mouth.

Much as I love buckets of profiteroles, I have a strong sentimental attachment to the éclair. When I was growing up in Honolulu, my dad would occasionally take me, after we went swimming on a Sunday, to a place called Ginza Bakery. It had these pretty white wrought iron chairs with round pink cushion seats. I would sit on one and order my éclair. It would arrive with a dainty fork, which I ignored in favour of shoveling it into my face with my hands.

My childhood attachment was to what the English call a vanilla slice (I hate that name: to me it's a tompouce): two reasonably thick millefeuille slabs, with icing on top and about 2 inches of vanilla cream / creme patissier in the middle.

OH MY.

I never eat them as an adult, but I remember grandma very occasionally buying them as a treat when it was just her and I (I don't recall us eating them when anyone else was around!)

Mr B was slightly bemused when his millefeuilles went down so well that first week. We never grow out of our childhoods in some ways :)
